Why Laminated Pastry Is Different
Creating laminated dough involves carefully developing gluten structure, maintaining exact temperatures, and repeatedly folding butter into dough to create the delicate layers found inside croissants and chocolatines. Even small temperature changes can dramatically affect the final result.
It is a process that requires patience, timing, and attention to detail, but it is also what gives these pastries their signature texture, structure, and beauty.
During these experiences, guests will not only learn how the process works, but why each step matters.
